Birria & Bones isn’t your average food truck. Founded by longtime friends Jon Simon and Eduardo, these two chefs have spent years grinding in kitchens, mastering their craft, and dreaming up a spot of their own. That dream finally hit the streets—loud, bold, and unapologetically flavorful.

Their menu is born from Eduardo’s Guadalajara roots and Jon’s Kansas City BBQ swagger—a fusion of fire, smoke, and soul. The crown jewel? Their signature birria, smoked KC-style before being slow-roasted in consomé. Add in smoked meats and gutsy vegetarian options, and you’ve got food with bite.

This crew isn’t here to play small. Birria & Bones is carving its name into Denver’s Ballpark neighborhood and beyond—food truck first, catering next, farmers markets and festivals after that. Every plate packs heritage, heat, and heart.
